Oatmeal made with this amazing creamline milk I just started getting from a local dairy, topped with fresh local strawberries. And a latte made with the same milk. YUM.

Yesterday, one large pancake, with just a shmear of maple syrup, topped with fresh strawberry and banana slices, and a latte.
Today, toasted everything bagel with butter, and a latte.

Utopia, how do you like the bagel thins? I bought a big bag of them from our wholesale club after trying the sample and I like them. I mean, it's not like a real bagel, but they're good for a small breakfast or as a sandwich or hamburger 'bun'.

I just bought some bagel thins this weekend too! It was the first time I'd seen them and I love the idea. I tried it this morning, toasted with cream cheese and it was good. That and scrambled eggs (one whole egg and one egg white) with a little bit of cheese...delicious!

I wish I could remember who posted the link to these so I could thank them again. I love them so (both the nutella and the peanut butter). They are super easy to make.
FLOURLESS NUTELLA CRISPS
These are also great with peanut butter. Because these are flourless they crisp up a lot as they cool. You can control the thickness with cooking time; around 10 or 11 minutes gets you a thicker cookie; more than 12 minutes gets you a crisp, thin wafer. Both are crispy after they cool, and both are fabulous. Make a tray of each and see what you like.
You will need: - 1 cup Nutella
- 1 cup sugar
- 1 tsp baking soda
- 1 large egg, lightly beaten
Seriously. It takes about 19 seconds to pull these together, and the mixing part is so easy that this is a great one for kids who like to help.
Mix all ingredients together and drop by tablespoon on parchment lined cookie sheets. Bake at 350F, but don’t go far! These go from cookie to crisp in seconds, so watch for when they rise and start cracking on top. Take them out just after cracking for a thicker result, or let them rise, crack and fall for thinner crisps.

I had a green smoothie--banana/vanilla yogurt, frozen banana, chocolate protein powder, spinach, milk and chia seeds. I ate it in a bowl with a little granola on top because I like a little crunch.
Then, for lunch, I had scrambled eggs (2 regular, 2 whites) with goat cheese, spinach and onion so I really had two breakfasts today!
