How do I know?

If my hair needs, wants, likes, or hates protein, moisture and things like that?

Honestly, the best way to tell is through trial and error. One "clue" that your hair might like protein is if it's fine and/or high porosity. Both of those hair properties tend to have a good reaction to protein.

+1 to what kimmidawn said. Also, I started trying protein because I noticed that my curl pattern was getting weaker (at one point about a month into CG my curls had drooped to 2b/barely 2c).

I don't know. I just tried a pt today on dd's hair. Oh, it made it soooo pretty. I guess I would just get a little pack of whatever, and try it!
