Spinach-Strawberry Salad Recipe

INGREDIENTS:
- 1/2 POUND SPINACH (STEMMED)
- 1-PINT STRAWBERRIES (QUARTERED)
- 1/4 CUP CHOPPED WALNUTS (TOASTED)
- 1 RED ONION (SLICED PAPER THIN)
- 3/4 CUP GORGONZOLA CHEESE (CRUMBLED)
- 1 TOMATO (CUT INTO WEDGES
-10 OZ. PORT WINE VINAIGRETTE
optional
- 6oz. grilled chicken breast

PORT WINE VINAIGRETTE RECIPE
- 1/2 CUP PORT WINE
- 1/2 CUP RED WINE VINEGAR
- 1/4 CUP SUGAR
- 1-TEASPOON DRY MUSTARD
- 1/2 CUP WHITE ONION ( DICED)
- SALT AND PEPPER TO TASTE
- 3 CUPS OLIVE OIL

INSTRUCTIONS:
- PLACE SALAD MIXTURE IN LARGE BOWL, ADD PORT WINE VIAIGRETTE TO TASTE

I got this recipe from a 1996 issue of Cooking Light magazine. I've made it many times for family & friends and it is always a big hit. I do a variation of this using pears, apples, Romain lettuce, arugula, and watercress for the strawberries and spinach.
