^^^Head Cheese isn't really a cheese but a lunch meat. It's made of random pieces of pork and spices. Wiki says it's jellied. But my dad and FIL made some once and they didn't jelly it. So maybe that wasn't technically Head Cheese: http://en.wikipedia.org/wiki/Head_cheese .
Heirloom tomatoes are varieties of tomatoes (there are many) that originated decades ago and have been passed down through families of people who cultivate them for specific qualities (taste, color, etc). I think of them as the seeds of tomato varieties that weren't very popular for a while until someone decided to plant them again and thought Yum, these are good! Let's grow more! lol...
Heirloom tomatoes have become very popular in the last several years, but I don't know when, why, how or where that began. I've had them and they just tasted like regular tomatoes to me. :idontknow:

About the tomatoes. People have been keeping seeds for heirloom tomatoes for a long time. They do it with a lot of other plants, incl veggies & flowers as well. http://seedsavers.org/ is one place you can find a lot of them. I think it became more popular because people that want to grow their own stuff can't rely on hybrid seeds to be true to their parent, let alone parent(s).
