I've tried many times to get my husband to like brussel sprouts. So, I show him that picture and say "Would you eat brussel sprouts like THIS?" and he said (don't read if you get offended easily) "I'd eat s*it if you put bacon in it." And I ask myself repeatedly, how did I get so lucky?

Well, he says he'll try brussel sprouts again if I try that recipe. He's come a long way from considering rice as a vegetable.

Could I use regular balsamic in place of the white so I don't have to buy yet another bottle of something?

I think so. The white has always tasted the same to me. I just figured the creator of the recipe didn't want to add any color. I had it in my pantry already, (since we have it at work) so I just used it.

low carb pita with eggplant/black soy bean hummus, tomato, avocado
salsa and soy chips
for anyone watching their carbs - this is super low carb. and delish.

My 2 cents on white balsamic - pffftttt. it's fine for a recipe where you don't want to add color, but I don't consider it a true aged balsamic. I'm kinda snobby about my balsamic tho. the darker and thicker the better. : )

My good balsamic was $200, so I don't use that often - mostly on strawberries. The white worked well enough. I think red wine vinegar would have tasted good on it too.

That pita sounds quite tasty. Is the taste of the eggplant hidden by the beans or do you still taste it?

Oh I think white balsamic is fine. But if I'm gonna spend money on balsamic it's gonna be on the real deal. But I love any kind of vinegar. I just got a huge bottle of coconut water vinegar. Mmmm.

I could still taste the nice sweet flavor of the eggplant, even tho black soybeans have a fairly strong flavor. I think you'd be able to taste the eggplant more if you used cannellini as the recipe called for, or some other lighter flavored white bean.

MMmmm, cannelini does sound nice.

I love those plates, tho those are the salad plates. I never use the dinner plates. They are gigantic! I love the coffee mugs tho.

It's got less sugar than the other recipe, in case you want something slightly more wholesome.

Lately I've been thinking of the porridge we made at the one place I worked. It was a mixed grain porridge from a local mill (had rice, grits, oats, and other grains). We cooked it with just some salt in milk and added a bit of butter at the end. It was served with golden raisins, toasted almonds, and I believe brown sugar. That stuff was soooo delicious!

Oh wow, that looks so good too!! I was definitely going to cut back on the sugar and butter in that baked recipe, I tend to do that with all recipes and they always come out plenty sweet. Now I guess I'll have to try both!! We have family coming to visit for two weeks pretty soon and I can use all the breakfast recipes I can find. Thank you!

the baked oatmeal looks really good but I almost went into diabetic shock just looking at the high carbs. : )
the second oatmeal recipe fits much better into my eating habits and such pretty pictures! I love the clear coffee mugs.

Man, I'm dying to make those sprouts. I've got a ton of food I need to use up this week though and I hate to buy more food when we don't need it. Then the next two weeks our non-meat eating company will be here. I never thought I'd want brussel sprouts so bad, who knew.
