Question Roasted Vegetable Tart recipe?

Anyone know a good one?

I had one from Tesco and it was delicious - but Im sure it has ingredients/preserves added that aren't so good for you.

I'd love to try creating my own one instead. I like cooking and I want to start learning more healthy meals rather than baking cakes and the such

My favourite is really simple. Take any vegetable you like, zucchini, carrots, onions, bell peppers, whatever you have in your fridge, as long as they're not "wet", chop these up and put them in a single layer in a baking tin and sprinkle with (fresh) herbs and a bit of salt and pepper to taste. Roast them in the oven for about 45 minutes.
Then take some filo pastry, put this on a baking sheet and put a little oil on it. Now, fold all the edges slightly and put this in the oven for a few minutes (about 7). Take it out and spoon the roasted veggies on top. Sprinkle with your favourite cheese and place in the oven for another 10-15 minutes.
