Default How long should I marinate the tofu?

I'm marinating the tofu with soy sauce.

Don't even bother marinating tofu. It's unnecessary. But if you want, it really won't make much difference if you marinate 30 minutes or a day. Cut it in thin slices for maximum exposed surface area.

oh my goodness. I used to love tofu, until my friend from Hong Kong had me try what he described as a delicacy which is "smelly tofu"................... LOL

has anybody ever tried that????

Are you freezing and then thawing first, OP? I find that makes a great difference in texture (more solid) and absorption (better).
