I made this up when I was vegetarian and was seriously craving mexican food.
First, you'll need extra firm tofu after you drain it cut it into strips then into cubes. It will kind of look like cubed cheese. use half the block if its only for two people.
take about a table spoon of butter (sounds like a lot but the tofu sucks it up like a sponge.) on medium to medium-high heat once its heated lower it to medium heat.
take your taco seasoning mix and generously coat the tofu with it. once its coated pretty well place it in the pan with the butter
you want to kind of think of it as stir fry as in you want to keep it moving because tofu burns quickly.
take some shredded lettuce and dump it in along with the tofu.
make sure you cover it for about a minute or until the lettuce wilts a little.
then pour some salsa over it and keep stirring until everything is covered in it. then turn off the heat and put aside. Add cheese and cover so the cheese will melt, then in about a minute scoop into the tortillas.
you can top this off like a normal taco, personally I love cheese so I'm always really generous with that and the sour cream, you can also use plain yogurt instead of sour cream if you want to save on the calories.
