Low Carb Diet Foods (:
So I wanted to share some foods and recipes that I have been making and eating for over 3 years now. I started the low carb diet in the summer of 2010. I lost over 80lbs by exercising and eating right! When on a low carb diet you have to watch out for how many carbs you are eating. I mostly stuck to deli meats, protein shakes + bars, eggs, cheese, red meats, etc. I cheated on the weekend sometimes, but during the week days I would not touch any junk food. It was hard at first to maintain this diet, but after awhile I got used to it and now I feel great. I also workout everyday by doing the Tae Bo basic workout. I have been sticking with that for awhile and I do see and feel results. Anyways for some low carb recipes I have, they are REALLY good. Every week I make a batch of "Cream cheese muffins." And what you need for that is;
2 8oz pkgs of cream cheese
1tbsp Vanilla Extract
1 cup of splenda. (Or whichever you prefer)
Make sure you preheat your oven to 350 degrees. Set up your baking cups. Then combine all the ingredients together in a mixing bowl and mix them until they are all combined together. Note** your cream cheese should be softened before putting it in the bowl. It will be easier that way. If its not softened then you can put it in a microwave safe bowl and cook it for a minute, and that should soften it up.
After you have all the ingredients mixed together then you can simply use a spoon too scoop the mixture into each baking cup until you've used it all. Then once that is done you put it in the oven for about 20-25 minutes. Once they are done let them cool for 2 minutes and then enjoy! They are delicious! They can be eaten with jelly or by themselves. :)
My next recipe that I loveeeeee are called Peanut Butter Cookies. Super simple to make! All you need is;
1 cup of peanut butter ( I use crunchy )
1 cup of splenda ( Or whatever you prefer )
1 tsp of Vanilla Extract
Preheat your oven to 350 degrees. Make sure you have a greased cookie sheet or whatever you prefer to use. Combine all the ingredients together in a bowl and mix. Once everything is nicely blended together then take out a walnut sized ball and roll it and put it down on the sheet and you can either use your thumb or a fork, and simply press it down in the middle of the cookie. Once you are done with all of them, put them in the oven to bake for about 15-17 minutes. Once they are done let them cool for 2 minutes. NOTE ** they might be a bit crumbly but they are DELICIOUS and very peanut buttery. My mom says they taste great when she dips them in her coffee! Also another note** I use crunchy peanut butter because its easier to swallow. I tried the creamy in the recipe and it was difficult to swallow because it was stuck to the roof of my mouth.
My third recipe that is sooooo addicting is called Pepperoni Chips. Again another super simple snack to make. If you like pepperoni, I HIGHLY recommend you try this. All you need is pepperoni. I use Sandwich pepperoni. All you do is take two paper plates, put a paper towel on one plate and put about single pepperoni slices around the edge and one in the middle (if your using the smaller slices then I believe you can fit 10 or so). After that place the other paper plate face down on top and put it in the microwave for about a minute and 15 seconds. They will cook and you will hear a popping noise, once they are done BE CAREFUL taking them out as they will be hot! Remove the paper place on top and carefully take the pepperoni chips and place them on the plate. Then VOILA you've got pepperoni chips and they are delicious! But mind youu they are a super salt bomb so make sure you are drinking something when eating them! Anyways I hope you enjoy! I'll be back to post up more recipes (:

Flourless peanut butter cookies are one of my very favorite low carb treats.
3 Egg whites
1/4 t cream of tartar
Pinch of salt
1/2 t vanilla extract
½ cup granulated sweetener (I use stevia or splenda)
Beat egg whites til stiff, then slowly add other
Drop by teaspoonfuls (or pipe thru a Ziploc bag
with the corner snipped off) onto parchment lined
(Can sprinkle tops with cocoa or cinnamon mixed
with some sweetener)
Bake in 300 oven for 20 minutes. Turn off oven
and leave cookies inside til cool and dry.
Makes 3 - 4 dozen.
Can I sub equal amounts of stevia powder for splenda? I haven't experimented baking with stevia but I use the drops (which I love!) in my tea.

It has to be the granulated stevia, not the ground up kind in the packets.
I make a "pancake" for breakfast.
2 Tbls low fat ricotta cheese
a couple of sprinkles of cinnamon
1 pkt Stevia
Mix them together well with a fork (the ricotta will be lumpy, but keep stirring). Cook as you would a pancake, I use a little oil and butter in the pan. Top with peanut butter.
You can easily double this recipe and keep in the fridge.

I have made these a couple of times. They do use a bit of banana so not as low carb as others but are still very good.

These little cheesecake bites are good too. Keep them in the freezer and they are there if you need a quick sweet something. My 4-year-old daughter even likes them.
Low Carb Layla: Ghost Poo aka Cream Cheese Clouds
I loved Jeepy's low carb pumpkin pie and I have tried a few of her recipes and they are worth adding to your collection if you low carb.
I really resisted going low carb for a long time. I watched Fat Head the movie a couple of times but I was just really hesitant to give up grains even though his message resonated with me. I did other things like Weight Watchers and stuff to lose weight but it never lasted. Granted, I am only 3 months out from losing 15 lbs but I don't see myself going back to eating high carb again. I look better, I feel better, I have so much energy that I never had when I ate all the crap I did before. And for the record, I am more low carb, high fat. I eat the fat off my steak and eat the chicken skin like I used to when I was a kid (and before I got fat) and use heavy whipping cream in my coffee. I also eat way more vegetables now than I ever have in my entire life. I love eating like this because I'm able to eat the foods I love, splurge once in a while, and never be hungry!
