Anyone here follow the easy clean diet?? I really need a support system to answer questions and give me tips and advice.
My first question is salad dressing recommendations. I love poppyseed and zesty italian, but how do I clean them up. My concoctions always come out too vinegary.
I also try to eat clean and make some substitutes with my favs....like cauliflower instead of rice or potatoes, zucchini or yellow squash instead of pasta. Salad dressings have been difficult for me, too. I love blue cheese. Very fattening. I've been mixing coconut oil with balsamic vinegar and a little Stevia. Not too bad. It's a good way to get my good oil in during the day. I've tried the Olive Oil, but I don't care for the taste. It's not too bad if I add some Italian seasoning to it.
I've been doing the Advocare 24-day challenge, so I've also started mostly clean eating. My personal favorite for salad dressing is homemade balsamic vinaigrette. I just combine balsamic vinegar, olive oil, fresh minced garlic and Italian seasoning (or fresh basil if I have it in hand). I use my magic bullet, which helps a bit with consistency.
I have the Magic Bullet, but I never thought to use it for a salad dressing. Good Idea! Thanks.
I made a new salad dressing last night and really, really liked it. It will be my go to from now on.
6 TBS watermelon juice
3 TBS oil (it called for EVOO, but I used Peanut oil by mistake)
1 TBS dijon mustard
1TBS finely chopped chives
1 TBS finely chopped red chili pepper
Salt and Pepper
I'm not positive on the measurements because I don't have the recipe here at work with me. I'm also going to start freezing watermelon juice this summer so I will have it on hand.
