Default All-purpose veggie confetti

I picked up a copy of Glamour this month and there's an article on getting healthier sandwhiches at lunchtime. It had a listing of "stupidwhiches" versus "smartwhiches". LOL One was a tuna wrap with lots of minced veggies in it and with light mayo. Looked good, so tonight I used a little food chopper to mince green peppers, carrots, celery, and red onions. (I would have put in the red pepper, too, but it had gone bad.)
I had an idea. Why not make a huge batch of veggies I like and all the veggies I shy away from and freeze in bags? If the veggies are chopped fine like that, I can get myself to eat them. I could take a bag out at a time. The possibilities are endless: soup, rice pilaf, tacos. (They do a similar mix in the fish tacos at a local restaurant and it is GOOD). I am trying to be healthier and I think this will help. I think a good mix would be cauliflower or broccoli, green and red peppers, onions, carrots, celery, and zucchini. I'm excited about this!
