Default KurlyKitty's Rum-Spiked Peach Crisp

(The what happens when Kitty gets bored at night and finds a bag of peaches and a bottle of rum)

Peaches
4-5 large peaches, sliced
1 Tbsp ligh rum
2 Tbsp sugar
1/2 tsp cinnamon (optional)

Crumb Topping
1 cup rolled oats
3/4 cup all-purpose flour
3/4 cup firmly packed brown sugar
1/2 cup margarine or butter, softened

Heat oven to 350 degree F. Toss peaches with the rum, sugar, and cinnamon in a bowl, and transfer to an ungreased baking dish.

In large bowl, combine all topping ingredients; mix until crumbly. Spread crumb mixture evenly over peaches.

Bake at 350 degree F. for 35 minutes or until peaches are tender and topping is golden brown.

Delicious plain or with ice cream or whipped topping, your choice. [img]images/smiles/icon_biggrin.gif[/img]

Any more than that, CP, and the texture gets too liquidy. [img]images/smiles/icon_sad.gif[/img]

I'm planning to soak the peaches next time so they absorb more of the rum flavor without making the crisp... well, not crispy. [img]images/smiles/icon_biggrin.gif[/img]

I'm using canned peaches. How many cans do I need to equal 4-5 large peaches, sliced?

KK, you can macerate the peaches in a mix of rum & sugar (upping the quantities), then add a few tablespoons of cornstarch or flour and that will thicken the filling.
