any good beans & rice recipes?

i LOVE beans & rice, but i don't know how to make them! [img]images/smiles/icon_rolleyes.gif[/img]
an easy one is preferrable, or even of the crockpot variety ... i'm just trying to scrounge up new recipes.

soups, too ... mmm. i'm scouring sites for good soups.
this is a version of west indian rice & peas

1 med onion
1/2 bunch green onions
2 cloves garlic (or more to taste) minced
3 tbs soy sauce
1 tbs pepper sauce (optional)
few sprigs fresh thyme
2 medium tomatoes
1 can pigeon peas (gandules) or red beans
2 stalks celery with leaves - diced
2 carrots diced
1 green pepper diced
1 red sweet pepper diced
salt to taste
4 tbs oil
2 tbs sugar
2 1/2 cups rice (i like long grain)

heat oil over med high heat until very hot add sugar and carmelize till dark brown but not black. add drained peas/beans. cook until the peas start to boil. add rest of seasonings and saute for a couple of minutes. add rice and about 3 cups of water (use chicken stock or beef stock for added flavour) bring rice to a boil. turn heat down and simmer until it's done.

more variations:
add 1 packet of lipton onion soup
add a ham hock, or smoked meat

I'm pretty boring. I usually make brown rice and then add a can of mixed beans. Makes a quick, delicious and nutritious lunch.
This is how my family makes Portuguese style rice and beans. There really isn't one recipe for it, it's kind of a regional thing. [img]images/smiles/icon_smile.gif[/img]


1 small onion, chopped
2 tblsp olive oil
1 can kidney beans or pink beans
minced garlic to taste
5 1/2 cups water
2 tblsp red wine vinegar
1/2 cup to 3/4 cup tomato sauce
2 cups of rice
salt and pepper to taste


Saute the onion in the olive oil until translucent. Add the beans and garlic and stir until mixture starts to boil. Add the water, vinegar and tomato sauce and bring to a boil. Stir in the rice and season with salt and pepper to your taste. Bring back up to a boil then reduce the heat and place the lid on the pot. Simmer until done, stirring a couple times.

This makes a very moist rice, a little liquidy, which is how my family likes it. [img]images/smiles/icon_smile.gif[/img]

Good old cajun Red beans and rice!

1 lb. bag dry kidney beans
1-1 1/2 lb. sausage(preferably pork and beef mix, though we prefer pork and deer)
1/4 lb. tasso
1 large yellow onion, chopped

Soak beans overnight if possible. Throw into crock pot the next morning with onion, sausage sliced in 1/2" pieces, and tasso, with enough water to cover. Add plenty of cajun seasoning, or salt and pepper and cayenne pepper. When you get home you should have a pot of thick beans and gravy, plus a house that smells like a little slice of heaven! Serve over rice, with hot pepper sauce. C'est bon! [img]images/smiles/icon_biggrin.gif[/img]
