I'm not sure why your oil mixture got chunky the first time, but for the second, I know that coconut oil solidifies when the temperature gets cooler. So that could be worth looking into.

Not trying to part my hair but letting it part naturally helped me get more root curl. Using conditioner on the roots also helped. The above suggestions are legit as well.
