You may not have done anything wrong. Do you have fine textured hair? (Each individual strand is really thin.) If so that just may be your hair- my hair is fine textured and it won't really hold set curls like that. It usually looks like beach waves on me. I've changed up products, kept them in for a long time, used gels & pomades but it was the same each time.
I have read though to stay away from curl enhancers doing these styles and that it can help to use a product labeled as a twisting product. I'd reccomend going from damp hair not wet so it will take less time to dry.
I have only done them by twisting then making the knots but I've seen tutorials where they just twist into s bun. I also have had to bobby pin my ends down- they don't stay tucked otherwise.
