Don't let yourself get too frustrated. It sounds like you're just boiling it too long. Bring it to a boil and as soon as a little white foam forms on the top it's probably time to strain. It will thicken as it cools.

I have dip my wooden spoon in it and when I pull it out and a thin "string" of gel drips off -- it's ready!
