I tried out a different bagel method today. I wish I hadn't.
These bagels are way too bready. Too fluffy on the inside. I was suspicious when I thought the dough was a bit wetter than a bagel dough usually is, and yet it's only 52% hydration, so maybe the humidity is at least partly to blame.
A bagel should be chewy and crusty, and dense. None of this fluffy ****. Fluffy bagels are an abomination --- white bread in bagel shape. You can get away with that nonsense in places that don't know better (cough, New England, cough), but not in New York. NOPE!
