Typically hair that is fine in texture and/or high in porosity does well with protein. Hair with too much protein generally feels brittle and straw-like. Generally the time to reach for protein is if your curls start getting droopy and/or your hair starts to feel super soft/mushy (overconditioned). Some people can use a wide variety of proteins in lots of different forms (conditioner, gel, PTs, etc), but some people find that their hair only tolerates certain proteins or protein only in certain portions of their routine. It's a lot of trial and error because no two heads of hair are indentical.
