Today I tried finger coiling my hair because I wanted to try something new. Results: too fluffy to stay coiled

I tried several different products and non of them made my hair right enough to coil. I also tried blow drying my hair thinking that maybe it was just too wet.

Products I tried:
-Eco Styler Olive Oil Gel
-Cantu Shea Butter Leave in conditioning repair cream
-My own shea butter mixture made with shea butter & various oils

Products I own but didn't try (because when i've used them in the past they left a white residue):
-Shea Moisture Coconut & Hibiscus Curl Enhancing Smoothie
-Shea Moisture Coconut & Hibiscus Curl & Style Milk

I don't know what it'll take to make my hair not fluff up so that it will stay coiled.

I also own Design Essentials Natural Defining Creme Gel but haven't tried it for finger coils. Any other suggestions?
