I make a "pancake" for breakfast.

2 Tbls low fat ricotta cheese
1 egg
dash vanilla
a couple of sprinkles of cinnamon
1 pkt Stevia

Mix them together well with a fork (the ricotta will be lumpy, but keep stirring). Cook as you would a pancake, I use a little oil and butter in the pan. Top with peanut butter.

You can easily double this recipe and keep in the fridge.
