I need a thanksgiving dessert recipe--mini pies, maybe?

I can't vouch for this cake because I don't like pumpkin (LOL) but the rest of my family raves about how easy and good it tastes!


1 large can pumpkin
3 eggs
1 c white sugar
1 12 oz can evaporated milk
1 tsp cinnamon
tsp each: salt, ginger, cloves

Mix together and pour into greased 9 x 13 pan.
box Spice Cake Mix
to cup chopped pecans (or mix with some walnuts)

Sprinkle the spice cake mix over the top of the mixture in the pan, then
sprinkle the nuts over top and dot with margarine.

Bake at 350 for 1 hour.

I already have a pecan pie (store bought) and many other desserts planned, but I keep looking at this one

I created this recipe for a contest - Pass the Lime and the Coconut Rum Pudding. I didn't win, but it's really delicious and simple to make. I plan on trying it with a tart crust and as a trifle. I think it would make a great holiday dessert!

I used dark rum, extra proof. The rum flavor was a bit overpowering while still warm, but once it cooled it was delicious!
